Snickerdoodle Protein Bites
Snickerdoodles are loved by just about everyone! At least in my house, these bites do not last long!
These sweet snacks are packed with flavor and protein to keep each bite purposeful – more protein! These bites can easily substitute out items for gluten-free, dairy-free, even tree-nut free! Switch up whatever you like, for the same measurement and enjoy with whatever your dietary needs are.
But Are They Good For You?
These sweet treats are packed full of healthy ingredients, the substitutions you need and loaded with protein and healthy fats. These little bites are loaded, which also means they are calorie heavy and will fill you up.
Each bite has about 150 calories in each, meaning it’s totally possible to enjoy several bites a day as your snack. While these may seem calorie heavy for something so healthy, they are so many LESS calories than the other sweet snack you would have grabbed, that would have been packed full of sugar and empty calories.
How to Make Snickerdoodle Protein Bites
One of the best things about protein bites, they are NO-BAKE! I don’t have to heat up the house, wait and wait. You can make this in your stand mixer, in a food processor, or just with a good ol’ wooden spoon and stir.
What makes this even easier, is that you mix the wet, mix the dry and you’re good to mix and freeze. I’m not sure it could get any easier for a delicious and healthy snack.
Once mixed, you’ll just need to roll them into 1.5 inch balls place on a parchment lined baking sheet and freeze. Once frozen, you can pack them into an airtight container or ziplock and keep in the freezer for up to a month…. if they even last that long. You can eat these from the freezer, it’s our favorite way to enjoy them. Or keep them in the fridge for a week and enjoy from fridge temps.

For starters, is there a bad time? Nope! Enjoy these snickerdoodle bites pre or post workout, on the go snack, or an evening sweet treat. Or simply, just because you really like them.

Equipment
- 2 Large Bowls
Ingredients
- 1.5 Cups All Purpose Flour or gluten free flour
- 1/2 Cup Vanilla Protein Powder
- 3/4 Cup Peanut Butter or any nut butter
- 1/2 Cup Honey or maple syrup
- 1/4 Cup Coconut Oil at room temperature
- 1 Tbsp Ground Cinnamon
- 1/2 tsp Vanilla Extract
- 1/4 tsp Salt
Coating
- 1/4 Cup Cane Sugar or coconut sugar
- 1 tsp Ground Cinnamon
Instructions
- In a large bowl, mix all the dry ingredients together.1.5 Cups All Purpose Flour, 1/2 Cup Vanilla Protein Powder, 1 Tbsp Ground Cinnamon, 1/4 tsp Salt
- In another large mixing bowl, mix all the wet ingredients together.3/4 Cup Peanut Butter, 1/2 Cup Honey, 1/4 Cup Coconut Oil, 1/2 tsp Vanilla Extract
- Then add the wet to the dry, mixing until smooth.
- Using a tablespoon or a cookie scoop, form 1.5 inch round balls and place on cookie sheet lined with parchment paper.
- If rolling in cinnamon sugar, mix sugar and cinnamon together in the small bowl, roll each ball before placing on parchment.1/4 Cup Cane Sugar, 1 tsp Ground Cinnamon
- Place bites in the freezer for an hour, to harden.
- Transfer to an airtight container and keep frozen for up to a month. Enjoy right from the freezer.
